It is a substance that remains during the passage of sugar extraction from sugar beet and sugarcane after the sugar syrup has condensed and passed through the turbines.
Molasses is a thick syrup that, depending on the sugar and straw, contains an average of 65-45% sugar and about 10% minerals and some amides and a very small amount of albumen.
Sugarcane molasses is much richer in sugar content (65% vs. 45%) than sugar beet molasses, so that in most factories, the resulting molasses are re-sugared.
